MAKING CANNABIS CHEESE CHOCOLATE CAKE

  • Chocolate curls (2oz 70% chocolate grated)

Instructions

Making the Crust:

Butter a 9-inch springform pan of about 3 inches high sides. Preheat oven to 350 degrees Fahrenheit. To make the crust, blend chocolate wafer cookies in a food processor until finely ground and preferably add sugar and cinnamon. To this, add melted cannabis butter and process until well blended, for a few minutes. The final step is to press the crumb mixture in a thick layer on strictly the bottom of the pan. Bake for about five minutes, and let it cool while you prepare the filling.

Making the filling:

With the filling, start by stirring all the chopped chocolate in a metal bowl set over a saucepan of simmering water until it is melted and smooth. Remove the bowl from the over water and cool the chocolate until it is lukewarm but still liquid enough to pour. Blend the cream cheese, sugar, and cocoa powder in a processor until it is smooth. In addition, blend in 4 eggs 1 at a time, and after mix in the lukewarm chocolate.

Pour your filling over the crust in the spring form pan and smoothen the top with most preferably a spoon. For about an hour, bake in the oven at 350°F until the cheesecake center is set and just appears dry. However, checking it frequently more so in the last 15 minutes is advisable to avoid overcooking. Allow it to cool for 5 minutes and then smoothen out the sides of the cake to loosen it with a knife. Chill the cake overnight.

Making the topping:

This is the last step to making this incredible cake but it can as well be made three days ahead and simply covered with foil and kept refrigerated. To prepare the topping, stir cannabis cream, 6 ounces chopped dark chocolate and sugar in a heavy medium saucepan over low heat until it is smooth enough.

Allow it to cool slightly and pour this chocolate mixture over the center of the cake. Then spread to within ½ inch of the edge and fill any cracks on the top. Chill in the fridge until topping is set for about 1 hour. Finally, transfer the cheesecake to a platter by releasing the spring form pan sides. The cheesecake can last for three days in the fridge.
